Cinnamon Peanut Banana Smoothie

INGREDIENTS:

  • 1 cup almond milk
  • 1 tsp cinnamon
  • 1 tbsp natural peanut butter
  • 1/2 banana
  • 1 serving vanilla Aloha Protein Powder
  • 1 Aloha Daily Good Greens powder packet (optional)
  • 3-4 ice cubes for desired thickness

DIRECTIONS:

Blend all of the ingredients until smooth.

Roasted Butternut Squash Soup

INGREDIENTS:

  • 1 butternut squash, cut in half lengthwise and seeded
  • 15-20 fresh sage leaves, finely chopped
  • 3 cloves of garlic, finely chopped
  • 2 cans coconut milk (not lite)
  • 2 cans vegetable broth
  • salt, pepper, oregano, rosemary, and olive oil, as desired
  • optional toppings – goat cheese, and roasted pecans

DIRECTIONS:

  1. Preheat oven to 400
  2. Lightly oil cut side of squash then season with salt, pepper, rosemary and oregano.
  3. Place squash cut-side down on a pan and roast in the oven for 30-45 minutes until squash is soft and skin is easily pierced with a fork.
  4. Remove from oven and let cool while you prep the base.
  5. Add 2 tablespoons of oil in large pot and heat to medium.  Add garlic and cook for 1-2 minutes until fragrant.
  6. Add coconut milk, broth and sage to pot and blend.
  7. Scoop squash from skin and add to the pot.
  8. Bring to a boil and then lower to a simmer for 5-10 minutes then blend until smooth using an immersion blender.
  9. Serve and top with goat cheese and pecans as desired.
